Virgin Voyages is refreshing its culinary program with new menus at The Beach Club at Bimini, The Wake and The Dock, adding Caribbean and Mediterranean flavours alongside updated steakhouse dining.

At The Beach Club at Bimini, chef Rashida Holmes has created a new menu inspired by her Bajan and Trinidadian heritage.

Dishes include curry chicken roti based on her mother’s recipe, snapper patties, tamarind BBQ skewers, tostones, sweet plantains and coconut rice pudding.

The menu begins rolling out on October 16, starting with Resilient Lady, followed by Scarlet Lady later this month, Brilliant Lady in November and Valiant Lady when it returns to Bimini in April 2027.

The Wake has also introduced refreshed brunch and dinner menus developed with Michelin starred chef Brad Farmerie.

New dishes include tuna tartare on selected ships, bacon wrapped twice baked potatoes, Oysters Rockefeller and additional seafood, alongside expanded vegan and gluten free options.

Meanwhile, The Dock has added new Mediterranean inspired dishes designed for sharing, including jewelled tabbouleh, red lentil dip, Turkish devilled eggs, kebbeh, pork souvlaki, beef kafta skewers and a selection of seafood.

Levi Mezick, Virgin Voyages Senior Director Culinary Program Development, said the updates were designed to retain popular dishes while giving returning guests more variety.

“Menus should never stand still. We kept the dishes Sailors love, then pushed them further with bolder flavours, more variety and plenty of surprises,” Mr Mezick said.

The refreshed menus at The Wake and The Dock are available now, while the new Bimini menu rolls out from October 16. Dining at all three venues is included in the voyage fare.
